Wahoo, also known as “Ono,” which means “good to eat” in Hawaiian, is mostly found in tropical and subtropical regions in the world. Long line caught, mostly landing in Hawaii, Wahoo is a sustainable fish option that is not easy to come by. Firm textures and a mildly sweet flavor that holds its color and moisture after cooking. A versatile fish, although commonly grilled due to its moderate fat content.
Quality is what is most important to me, and I never have to worry about it with Sam Rust.
