Blueline Tile, or Grey Tile are found along the East Coast of the North Atlantic ranging from Nova Scotia through the Gulf of Mexico into the Caribbean. Most tilefish are sold exclusively fresh and have a market size between 3-10 pounds, with availability in both whole fish and hand-cut fillets. Blueline Tile received their name due to the gold and blue strips that run from their eye to their mouth. A gorgeous fish with a sweet, delicate flavor almost similar to crab or lobster due to their crustacean diet. Tile fishing is highly managed and sustainably sourced, typically long-line caught with little bycatch.
