A vibrant, wild caught fish available year-round in the depths of the Atlantic and Pacific coastal waters. Low in fat content with delicate and sweet flavors, similar to lobster or crab, which is the majority of its diet. A softer flesh that yields thick fillets, however beautifully and commonly served whole. A great fish for table presentation, commonly enjoyed broiled, grilled, and baked.
Quality is what is most important to me, and I never have to worry about it with Sam Rust.
