A highly localized fish that is found in the coastal waters of the Mid-Atlantic caught by long-line fishing on a charter boat. They are typically hard to catch since they spend most of their life roaming near shipwrecks and reefs. Tautog are well identified by their thick, fleshy lips that have developed due to their crustacean diet. Sweet flavors and firm textures with a creamy, delicate complex. A must-try fish with great versatility!
