Spot fish roam the coastal waters of the North Atlantic, most commonly found in the Chesapeake Bay through to South Carolina. A hyper local delicacy in Virginia and the Carolinas with a light to moderate flavor, a small flake, and sweet notes. Spot are typically on the smaller end, with retail sizes of 1-3 pounds. Due to their small size, spot are almost exclusively sold whole, dressed, or gilled and gutted. Fantastic for pan frying whole, and work well for retail displays and restaurants alike.
