Sablefish is a highly prized fish and is considered a delicacy in many parts of the world. Commonly found in the deep, frigid waters of Alaska and has grown a popularity in the fine-dining scene. Sablefish are noted for high fat and oil contents, which gives the fish a rich and buttery flavor. Flesh is mild, tender, and holds moisture well after cooking. Smoking is a common preparation and pairs well with ginger and soy-based marinades and sauces.
Quality is what is most important to me, and I never have to worry about it with Sam Rust.
