Silver Dory, or John Dory, is a bottom dwelling, wild caught fish that typically found along the continental shelf of Australia. A firm and moist fleshed fish with delicate and notably sweet flavors. A scale-less, medium textured fish with a low oil content, most suited for baking or roasting whole. Fillets have a beautiful silvery, pink skin and are best prepared deep fried, poached, sautéed, and steamed.
People come to our restaurant because we don't cut corners and they know they will get fresh, local food - and Sam Rust is a big part of that.
