A great choice of seafood due to sustainability and is considered one of the best eating fish of the ocean. Generally found in the great depths of the Western Atlantic with a mostly fish, squid, and crustacean diet, giving them a nice distinct, shellfish flavor. Constantly roaming in motion of cold waters, which allows for a more firm and flaky texture when cooked. Their thick fillets will hold up well in most cooking methods and are excellently prepared in chowders and seafood sauces. A wild caught variety offered filleted or whole.
