Corvina is a tropical and subtropical fish popular in the United States and South America, commonly caught in the Caribbean and the Gulf. With a taste similar to sea bass, Corvina is mild and sweet with a firm flesh and large flake. Corvina is known for its high fat content and versatility and is commonly prepared as ceviche. This fish pairs well with both mild and bold flavors.
