Catfish are commonly and sustainably farm-raised in Mississippi. They are grain fed, which gives them a sweet flavor. Catfish tend to be less flakey compared to other whitefish and typically contain density and moisture after cooking. Mild in taste with low fat content and is commonly enjoyed broiled, sautéed, baked, or grilled; however you will usually experience them fried.
People come to our restaurant because we don't cut corners and they know they will get fresh, local food - and Sam Rust is a big part of that.
