Fresh Fish Forecast – 6/28/19
  • Halibut prices are down and quality has been outstanding. Fresh shipments coming in throughout the week.
  • Small amounts of fresh rockfish coming up every now and then – with the majority of the fish in the 2-4 lb. range.
  • Supplies of groundfish including sea bass, spot, spanish mackerel, and blue have been good and prices are fairly steady.
  • Quality on Bronzino’s has been great, and supplies look to be good throughout the summer.
  • Overall, the prices on Scallops have been stable. We are in spawning season so make sure you are keeping scallops well iced and at the proper temperatures.
  • It’s also spawning season for PEI mussels, so make sure you are keeping mussels buried in ice and under strict temperature controls. You can detect spawning by the presence of a thick, light orange liquid.
  • Live lobster prices have started to creep up and will continue through the 4th of July – normal trend for this time of year.
  • Flounder prices are still up because of the quota cuts. No clear sight on when they will come back down.
  • Swordfish prices should stay steady for the next week or so.

Often I’ll talk with my account manager at Sam Rust and they’ll come up with a product that I didn’t know about or you don’t see in the market – which helps keep my menu exciting.
