Triggerfish are hook and line caught along the Atlantic coast, typically found near shipwrecks and reefs in temperate and subtropical waters. Their diet consists of barnacles, mussels, and sea urchins, which gives them a taste similar to sweet crab meat, grouper, and sheepshead. Triggerfish are nicely paired with light flavors; their taste is delicate enough to where you will not want to override the true flavor of this fish. A flat-bodied fish with firm flesh idea; for pan frying, although a versatile fish that can be prepared for most cooking methods.
People come to our restaurant because we don't cut corners and they know they will get fresh, local food - and Sam Rust is a big part of that.
