Our catfish are sustainably wild caught along the East Coast of the USA, most commonly landed out of the Chesapeake Bay in Virginia. A mild, sweet flavored fish with low fat content and commonly enjoyed broiled, sautéed, baked, grilled, or fried. Catfish tend to be less flakey compared to other whitefish and typically maintain their density and moisture after cooking.
People come to our restaurant because we don't cut corners and they know they will get fresh, local food - and Sam Rust is a big part of that.
